For the Love of Peanut Butter

Last night after work we (Dustin & I) decided to make peanut butter rolls; which are delicious!! Hehe. (Unlike Dustin, I am not a big cook so this is the first real treat I have really ever made) Needless to say, in the process of making the peanut butter balls we made a huge mess and used the powdered sugar and melted chocolate as war face paint... I never knew cooking could be so much fun.

One thing I realized that when you take the time to make something yourself, by the time it is complete you are not really in the mood to even try your finished product. So, once we were done cleaning up the disastrous kitchen and washing all the ingredients off of one another we found ourselves just sitting on the kitchen floor for about an hour facing each other and exchanging funny faces to try to make the other laugh. As ridiculous as it may sound it was cute and hilarious. Then for dinner we made grilled cheese w/turkey sandwiches and cheddar broccoli soup. YUM!
All in all it was an fun-filled night and we plan to try a new recipe this weekend. Wish us luck!!






Directions:




To start, line a cookie sheet with wax paper and set aside. Mix 1 1/2 cups peanut butter, 6 cups powdered sugar, 1 cup butter, and 1/2 tsp. vanilla together (dough will be slightly dry).

Next, roll the dough into 1 inch balls and place on the cookie sheet. Chill in the freezer for about 30 minutes.

Place 4 cups of chocolate chips into a bowl and microwave for 1 minute. Stir and heat again for 30 seconds. Do not over heat the chocolate as it will keep its shape until stirred. Once the chocolate is smooth, leave it on the counter until it is warm, but not hot.

Last, you will drop the dough into the chocolate; roll it to cover then using a spoon drop it back on the wax paper. Repeat with all balls; return to the freezer for 1 hour then store in an air tight container in the fridge until ready to serve.
